A delicious recipe for chicken stew served over rice. This stew recipe only uses one pot, lots of veggies, and cooks in less than 40 minutes.

Sear chicken breasts (or thighs) on medium-high heat in tablespoon of olive oil
Season chicken with salt, pepper, and oregano
Add ground Italian sausage and brown
Add 1 cup of water
Add chopped celery, white onion, garlic, and sweet potatoes
Cover and reduce heat to medium-low
Simmer for 25 minutes, or until sweet potatoes are tender
Shred chicken into large chunks inside pot
Add lemon juice
Serve over white rice or with a side of bread
