Empty a box of white cake mix into a large mixing bowl.
Add 2 eggs, 1/4 cup of vegetable oil, 2 tsp lime zest, and 1 tbsp lime juice.
Mix the cake mix, eggs, oil, and lime using a rubber spatula until a dough forms.
Add about 1/4 teaspoon of green food coloring to turn the dough bright green. Mix.
After the dough is thoroughly green, cover the mixing bowl with saran wrap. Chill in the refrigerator for 30 minutes.
Preheat the oven to 350 degrees.
After the dough is chilled, pour granulated sugar onto a plate. Pour powdered sugar onto a second plate.
Use a 1" cookie scoop to scoop out the dough. Use your hands to roll the dough into a ball.
Roll the ball of dough in the granulated sugar. Then in the powdered sugar.
Place each ball of dough on a baking sheet lined with parchment paper or a silicone baking mat.
Bake in a 350-degree oven for 12 minutes.
Remove from the oven and allow to cool before enjoying.
