In a small skillet, heat the Panko bread crumbs on medium-low heat. Stir frequently. Remove from heat once they reach a golden-brown color.
Whip six ounces of cream cheese using a hand mixer or stand mixer.
Add cream cheese and sour cream to a bowl. Stir to combine.
Add Ranch seasoning. Stir to combine.
Add diced pickles, garlic, lemon juice, pickle juice, and fresh dill. Stir to combine.
Add toasted Panko bread crumbs. Stir to combine.
Garnish with more diced pickles, dill, and bread crumbs.
Serve in a small serving bowl with thick chips.
