Cream the butter, granulated sugar, brown sugar, and vanilla in a large bowl using an electric mixer or stand mixer.
Stir the egg into the butter mixture.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Add the dry ingredients to the wet ingredients. Combine thoroughly.
Chop the mini eggs into small pieces using a large knife.
Mix the chopped chocolate eggs and chocolate chips into the dough.
Transfer the cookie dough to an 8x8 lined square baking pan. Press the dough into an even layer along the pan.
Top with whole mini eggs and more crushed eggs.
Bake in a 350-degree oven for 30 minutes.
Remove from the oven and cool for 10-15 minutes. Grasp the edges of the bottom layer of parchment paper and simply lift out the cookie.
Cool for an additional 30 minutes before cutting into bars.
