Thaw frozen puff pastry dough until pliable, about 1 hour.
Preheat oven to 350 degrees Fahrenheit.
Unfold one puff pastry sheet.
Place 9 scoops of stuffing across the pastry dough. Use the pastry folds to make 3 rows of 3.
Top each scoop of stuffing with pieces of leftover turkey and a scoop of mashed potatoes.
Drizzle gravy and cranberry sauce over the leftovers.
Place the remaining pastry sheet over the first pastry and leftovers. Cut the pastry pockets into 9 equal squares using a pizza cutter.
Press together the edges of each little puff pastry pocket. If the dough doesn't stick easily, use a little egg wash to hold the edges together. Use a fork to secure the edges.
Transfer pastries to a baking sheet covered with parchment paper.
Add an egg wash to the top of each pastry with a basting brush.
Bake for 15 - 20 minutes, until the tops are golden brown.
Serve warm with gravy or cranberry sauce for dipping!
