Lay down square egg roll wrappers in a diamond shape.
Place a line of 5 overlapping slices of pepperoni across the center of each diamond.
Place thinly sliced pieces of fresh mozzarella cheese over the pepperoni.
Drizzle 1 tablespoon of pizza sauce over the cheese.
Sprinkle shredded mozzarella cheese over the other ingredients.
Fold the bottom point of the egg roll wrapper over the pizza fillings. Use water on the tip of your finger to secure the edge of the folded wrapper.
Fold over each side of the wrapper.
Roll the wrapper as tightly as possible. Use water to wet the top corner of the egg roll wrapper and secure it.
Preheat the air fryer to 400 degrees Fahrenheit.
Place pizza egg rolls in a single layer on an air fryer rack or basket.
Lightly brush each egg roll with oil.
Air fry at 400 degrees for 8 minutes.
Flip them over and air fry for another 5 minutes.
Serve with warm marinara sauce, garlic butter, or Ranch dressing for dipping.
