Combine vanilla vodka, butterscotch schnapps, carrot juice, Irish cream liqueur, and lemon juice in a cocktail shaker.
Add a handful of ice cubes and firmly place the lid on the cocktail shaker. Shake for 30 seconds.
Strain the cocktail into a chilled glass with a toasted carrot cake topping dip rim.
How to Make a Toasted Carrot and Coconut Rim
Finely shred a single carrot and 2 raw walnuts.
Add them to a pan with coconut flakes and ground cinnamon.
Cook the mixture on medium heat for about 10 minutes. Continuously stir the mixture to toast the ingredients evenly and prevent burning.
Allow the mixture to cool.
Dip one side of the cocktail glass into vanilla icing.
Dip the icing-covered rim of the glass into the toasted carrot cake topping.
