Dairy Free White Chicken Chili

A delicious recipe for dairy free white chicken chili, made with white beans, an array of peppers and corn. This chili is lighter than a red chili, but is still packed with flavor.

What you need

cup white onion

cup red onion

red bell pepper

orange bell pepper
jalepeno

cup frozen corn

oz white beans

oz black beans
tbsp fresh garlic

tsp lime juice

oz chicken stock

tsp cumin

salt

pepper

tbsp cilantro
Instructions
0 Brown the diced chicken in olive oil in a large pot. 1 Once the chicken is cooked through, add onions, garlic, and peppers. cook until they soften. 6 Cook until aromatics are fragrant and soft 2 Add beans (after rinsing thoroughly), corn and chicken stock. 3 Season, add lime juice and cilantro. 7 Simmer for 30-45 minutes.
