What you need

tsp vanilla extract

cup butter

cup granulated sugar

cup pumpkin puree

cup all purpose flour

tsp pumpkin pie spice

cup cinnamon sugar

0 Whisk egg and vanilla in a small bowl. Set aside. 1 In a large bowl, cream the butter until fluffy using a handheld mixer. 2 Scrape down the sides of the bowl with a rubber spatula. Then add the sugar. Mix for another 2-3 minutes. 3 Pour in the egg and vanilla mixture and add the pumpkin puree. Mix for an additional minute until well combined. 5 Whisk together flour and pumpkin pie spice. 4 Add the flour mixture and mix at low speed until well combined. 6 Chill dough in the refrigerator for 2 hours. 7 Preheat the oven to 325 degrees. 8 Roll cookie dough into 1.5-inch balls. Place on a baking sheet lined with parchment paper or a silicone baking mat. 9 Press your fingers into the dough to flatten it down to 2-inch cookies. 10 Sprinkle cookies with a cinnamon sugar mixture. 11 Bake for 15 minutes.
